FScN 2001: Cooking for Health and the Environment: A Food Systems Approach

HFHL staff and UMN students co-developed this experiential interdisciplinary course for UMN students. The lecture/lab format course provides students with the knowledge, critical thinking, and technical skills necessary to make food choices based on nutritional, environmental, and local and global societal issues. Students learn about our complex food system from expert guest lecturers representing multiple disciplines and sectors, classroom discussions, and a cooking laboratory. This course fulfills the CFANS Experiential Learning requirement and as of Fall 2020 is an official Food Science and Nutrition department course.
